In reading around the forum it seems there are plenty of questions about the Jamaican fly-fishing industry/fishery which i reckon need a once-over.

Sunfish: usually is tripple tail. Never (to my knowledge) bonefish.
Boney-fish (pronounced "bonafish) is bonefish. Yes, we do eat them. there are very specific, nearly magical techniques to remove the bones.
Tarpon (pronounced "Tarpong"): yes, some do eat them though they smell like an old sock full of boogers. They are BIG (as are the bones, snook and permit) but they are also well fed and wiley. You'd better be good.

Local industry/Operators: YES !!. Well, one. (though yes, the artesonal guys will laugh at you, as they do me. They think i'm trying to catch birds) The Montego Bay Marine Park (the MPA in Mo-Bay) facilitates and supports Salty Angler charters as a pilot in the industry for Jamiaca, and an example of sustainable fishieries through high-value tourism to the local arteanal fishers.
