I'm considering buying a Kayak to fish (Stripers) in the back waters of Jamaica Bay & inside Sandy Hook. I've done a little Kayaking but never fished with one... What features should be considered when choosing a fishing Kayak ? Any suggestions reardging Size, Manufactures, Sit on Top etc would be greatly appreciated

It would help if you posted your height and weight. But here's a few of the more popular fishing kayaks to look at that will work fine in the areas you posted:

my good man go look at the pungo ..
what I like about it. it's not a SOT--127-3- --127-3-
tracks well , very stable my kids stand in them , if it gets cold and snotty out there your pungo will keep you safe and worm . did I say it's not a SOT--127-3- , holds a ton of stuff we all need

So does the kayak forum here...you might want to try posting there. Sometimes, kayak related responses are limited on other boards.
To answer one of your questions...I think you may find there is a limitless list of things to consider when trying to find a boat that fits your needs. Everyone has different opinions based on personal preference, ability, and where they fish most often. Some stronger than others.
There are popular models but try every boat you can get into on the water. Most shops have demos and will let you paddle them a bit. Ask to borrow friends boats etc. There is no better way to figure out what you do and don't like.
If there was one thing about a fishing boat I would never leave home without if I could, would be a rudder. Most people fishing swear by them. Most of the time, kayaking and fishing from a kayak have differrent sets of tolerances and preferences with respect to comfort and performance.
You will no doubt come accross conversations regarding "speed". This normally does not refer to the actual velocity on MPH, but more the energy required to move that boat at a relative velocity. For example, if I have 2 boats and I paddle them the same MPH over the same distance, the one that takes less energy to do so is a "faster" boat.

As Shaun said, it would be worth your while to check out our Kayak Forum. (http://reel-time.com/forum/forumdisplay.php?f=34) Our members have gone over this issue many times and in many ways. Both sit in (SINK) and sit on top (SOT) yaks have been covered. One thing that is a little different here on RT is we a generally pretty open minded. Other boards tend to focus on particular types of yaks and styles of fishing. Nothing wrong with that but it's food for thought. If you post specific questions on the yak forum I'm sure that you will get all the answers you need.
