Fishing in the UK is good all year round as long as you are flexible. Most rivers in Wales and England are not open to trout fishing before April but some rivers hold grayling and you can fly fish for those. I cannot vouch for trout fishing in Scotland or Ireland before April as I have never done it.
Lake or loch fishing is where it's at for most people during the Winter and early Spring. There is some really good fishing to be had and this ranges from small man made stocked ponds to remote hill lakes that require a hike to get to but hold wild populations of brown trout.
Two pieces of advise I can give you. Get a hold of a magazine called 'Trout Fisherman' that is published in the UK. It has all the information you need for lake fishing such as fishery addresses and location for the entire UK. Also bear in mind that you have to pay for fishing in the UK on two accounts as you will need both a rod licence and you will also have to pay to fish where you decide to go. Prices vary but the magazine will put you right.

I've fished Lough Cullin and Lough Conn for brown trout which was a blast. These lakes are around the Pontoon area, in central Mayo between Castlebar and Ballina. But depending on when you're heading over there, the river Moy has arguably some of the best salmon fishing in Europe. It's in eastern Mayo, runs through Ballina, and has miles of fly-only angling. A Google search can provide all you need to know....
And if you're golfing over there as well let me know....
I'm getting jealous just writing this! :-%

I've been doing some family history and found out one of my great grandfathers was a mayor in Ballyhaunis and involved in the Irish independence movement. Ballyhaunis is right near the Moy so this trip should turn out to grand. Just have to wait for the next election!
