Over the last year or two I've been reading about tuna fishing. This year I caught some off Chatham. It seems like there are 2 catagories of tuna fishing, school and gaint. Obviously the tackle requirements are different, but it seems like most boats that fish for giants use bait, bluefish or herring etc. Does anyone troll for them, do they use similiar lures to what we use for school tunas? And the flip side, could you drift herring or baby blues for school tuna?

Yes you can troll for giants. Usually it is better early in the season if they are around! Large squid bars seem to work best then. Later in the season rigged natural baits work better(ballyhoo).
As far as the small fish with bait.
there was a lot of 150#ers or so caught by guys fishing giants this year they were a nuisance! When they are around chumming and using herring or mackerel on the hook should work. But be prepared for a big one!!
