Anyone know where I can find a detailed guide on the proper way to cut a tuna? Any recommended books, web sites, etc? I know the basics, but I am sure there are things I could do better. Thanks.

Thanks Cajunman, that diagram will come in handy this summer. I was actually thinking more in terms of the actual cutting of the fish into steaks, sushi, etc. I have seen a few diagrams that show where all the different sushi cuts are (maguro, toro, etc), but don't really know the correct way of getting at them. I have found a lot of diagrams on how to properly fillet other types of fish, but haven't come across anything for tuna. Thanks again.

We had a fellow come to our Tuna School and take a 15lb loin and cut it into sushi. I video taped the whole thing and I will make it available very soon for free!! Hopefully next week I will have it organized. Thanks, Derek
