View Full Version : How do you like your Tuna Steaks?

We went out of Green Harbor to our usual spot 200ft line. Searched for about 2 hours. Got beat around pretty good so we headed home. Tonight we had tuna steaks from our last trip. Blackened Cajin rub on steaks cooked real fast in a cast iron pan. Any other good ideas?

my grill has a searer,(awesome feature for a tuna nut) about a 1/16 in. on each side. or about a minute. a little soy sauce and sprinkle with Japanese bread flakes first. VERY rare in the middle. heaven. had a couple last night.:)

Someone posted this awhile back, and the recipe is on foodtv.com,--search "chimney tuna"...recipe is soy, honey, wasabi powder, I threw in some fresh chopped ginger and a little crushed red pepper.....marinate for an hour or two, sear 45 secs on each side, and enjoy (set aside some of the marinade for dipping). stuff is like candy.

Similar to the Tuna Ceviche but I have been using this one:

For a 1" steak, 2 min on each side (yes I use a timer) on a hot grill. Red to pink in the center and melts... yummie! Less time for more rare

If we have already had our fill of sushi for the day and want to use the grill, any of the Asian influenced recipes work for me, soy, ginger and sesame oil, but this one has been the very best, in my opinion: http://www.epicurious.com/recipes/food/views/13252

Tuna Tar Tar


1. Mince tuna into small pieces

2. Add tablespoon of minced Capers

3. Dash of sea salt to taste

4. Add ground black pepper to taste ( couple of turns of grinder)

5. Dash of sesame oil

6. Dash of Soy Sauce (Teaspoon or less to taste)

7. Dash of Mongolian Fire Oil ( Asian section of grocers wife gets hers at Stop & Shop) Keep in mind the Soy Sauce will cook the fish so eat immediately do not make up ahead of time.

Tuna Mustard Glaze:

1. Mix Dijon mustard without mustard seeds intact

2. Tablespoon of Soy Sauce

3. Fresh Rosemary NO STALK just the leaves

4. Brush glaze onto tuna steaks and put on grill

5. Sear on all sides just enough to cook the outside and leave the inside red and warm
The above ingredients will vary depending on amount of tuna used and amount of mustard
