Do you all change out the split rings and hooks on all of your Tuna lures (hydropoppers, deadly dicks etc) if so, what type, sizes do you use. I never really thought of it until last week when I had a big Striper mangle a split ring on one of my lures. Figured a Tuna could straighten the hook or blow out the ring

Spro 80+ pound rings. Size appropriately for the lure.
I like Gamakatsu and Owner 4X strong hooks and fish singles on everything.

what kevin said, But I like gamatsu 4X trebles for all my poppers rather than singles. Just my preference.
if youre close to the north shore of mass, first light anglers has everything you need.
I swap out the hardware for Spro rings 80#+ and go with Gamakatsu SC15-2H and Tiemco 600SP. Both in larger sizes like 6/0.

I step up the split ring to 150# Spro and use a size 8 live bait Gama....I might be overdoing it, but I haven't lost one due to equipment failure yet...who knows? maybe you hook a big fatty!

how do you guys rerig the swivel on the deadly dicks?

DD re-rig. Split wrings top and bottom, 50-80 lb swivel of top ring. Split ring pliers are a huge help.
