Anchoring canoes

I'm having a durndest time fishing slowly from a canoe on windy days. This is the time to fish the pond dropoffs sloowly. I've tried all sorts of anchoring bridles, etc. in an effort to keep the canoe from blowing around, without much good. A fore and aft bridle terminating in a loop amidships (to which the anchor line is attached) seems to work best so far, but the boat still blows around too much for careful deep fishing. Also tried twin anchors and almost fell overboard before abandoning that one. Does anyone have canoe-anchoring tricks to pass on? What about ways to fish deep water this time of yeaR? Thanks much.
