I've been playing w/ various techniqueus here over the years. Thr tail is easy - cut off the treble; replace it w/ a slightly larger size single hook dressed w/bucktail and your set there.
I always just plain remove the middle treble of a three treble lure and don't replace it.
The front one is the hard one. In years past I have replaced the treble with various sized single hooks, both dressed and undressed and have not ben satisfied with where the hook lays while the lure is in motion. As you surmise it tends to lay flat agai
nst the lure's belly rendering it less effective against a striper head-strike.
This winter I tried a different tack - using vise-grips to cut off one of the three hooks on the front treble; leaving two hooks in front and one on the tail.
I have yet to try any of these lures so I cannot give you an accurate assessment of how they work.

Because catching a 14" bass on a triple treble lure really really sucks for both the catcher and the catchee.
