Those Brood stock salmon are not the best eating fish around. I find that a life in a hatchery tends to make the meat soft and give them a "powerbait" taste. So, I now release them when I'm lucky enough to land one. (It can be pretty tough to do if y
ou have a jinxed camera like I do) I like to think that perhaps I'm leaving that fish for an impressionable 5-year old kid to get excited over some day.
You may try marinading a filet in Italian salad dressing before grilling. Or you may try a sauce mixture of sour cream, garlic & condensed cream of mushroom soup. (salt -n- pepper) Pour on fish and bake it. Its a really universal sauce mix and is better t
han it sounds.
Personnally, I like to smoke the filets in my water smoker.
