OK - how do I dissect a striper cheek off a fish and how much meat should I expect in one?
For that matter - how much meat in general does a striper hold - I'm finding a 10 pound 30" fish yields 2 fillets; each about 2 - 2.5 pounds. Should I be getting more meat off these fish?
